Beetroot Soup
This Beetroot soup is not only healthy and quick and easy to prepare, but also incredibly delicious. In just 20 minutes you will get a light dinner full of vitamins and flavor with this recipe. A hearty and nutritious meal especially in the colder seasons.

Beetroot

Onion

1 clove
Garlic

Olive oil

Cooking oil

Preparation

Heat the cooking oil and cook the sliced onion and garlic until slightly brown, then set aside.

Use the same pot and add the thinly sliced beetroots. Cover with a lid and cook the beetroot without water for about 6 minutes. Stir in between.

Now put the beetroot into a blender together with the cooked onion and garlic. Add 1¼ cups of water, and blend until you get a smooth paste.

Warm in a pot before serving and add lemon juice and salt.
