Ingredients for 4 – 5 Servings

  • 3 Cups

    Basmati Rice

  • 3

    Cloves

  • 1 finger-length

    Cinammon Stick

  • 1

    Star Anise

  • 4

    Cardamom Pods

  • 2

    Bay Leaves

  • 1/2

    Onion

  • 4

    Cloves of Garlic

  • 15

    Cashews

  • 1 tsb

    Raisins

  • 2 tbsp

    Ghee or Coconut Oil or Sunflower Oil

  • 6 Cups

    of Water

  • 2 tsp

    Sea Salt

Preparation

  1. Wash the basmati rice and set it aside

  2. Chop the garlic and cut the onions into long thin strips

  3. Heat the ghee or the oil in a pan. Add the cloves, cinnamon stick, star anise, cardamom and bay leaves and stir until they release their aroma (around 2 minutes)

  4. Add the onion and garlic and cook until the onions begin to golden

  5. Add the cashews and the raisins and mix well

  6. Add the water, stir and bring the mixture to boil

  7. Lower the flame right away, cover with a lid and let the mixture simmer for 10-15 minutes. Stir regularly to prevent the rice from sticking

  8. Remove from heat when the rice is cooked
