Chickpea Stew

Ingredients for 1 Serving

  • 1.5 cups

    Water

  • 1 tbsp

    Cooking Oil

  • 1 cup

    Chickpeas (cooked)

  • ¼ cup

    Potato

  • ¼ cup

    Carrots

  • ¼ cup

    Cauliflower

  • ¼ cup

    Onions, chopped

  • ½ cup

    Tomato

  • 1 tsp

    Curry Powder

  • ¼ tsp

    Black Pepper

  • ¼ tsp

    Coriander Powder

  • 1 tbsp

    Cilantro + Parsley

  • ½ tsp

    Turmeric powder

  • 1 piece

    Bay Leaf

  • 1 piece

    Cinnamon Stick

Preparation

  1. Heat the oil in a pot, then add onion and cook for 1 min.
  2. Now add the bay leaf and the cinnamon stick and cook for another minute.

  3. Add the chopped carrots, potato and tomato and cook for another 2-3 min. Stir in between.

  4. Now add 1/2 cup of water, mix well, cover with a lid and cook for about 5 min.

  5. Add the cauliflower and cook for another 5 min.

  6. Now add the cooked chickpeas, curry powder, black pepper and coriander powder and the remaining water.

  7. Stir well and let the mixture simmer for another 5 min.

  8. To round things of, you can add fresh cilantro and/or parsley.

Notes

We recommend you cook your own chickpeas in a pressure cooker instead of buying them in a can. The nutritional value is much higher when you prepare your chickpeas fresh.
