Kapha/Pitta Balancing, Vata in Moderation
Chickpea Stew
This stew does not only taste amazing, it is a protein powerhouse, packed with nutrients and fibres. If you are looking to replace animal protein from your diet, this is your dish!
Ingredients for 1 Serving

Water

1 tbsp
Cooking Oil

1 cup
Chickpeas (cooked)

¼ cup
Potato

¼ cup
Carrots

¼ cup
Cauliflower

¼ cup
Onions, chopped

½ cup
Tomato
-
1 tsp
Curry Powder
-
¼ tsp
Black Pepper

¼ tsp
Coriander Powder

1 tbsp
Cilantro + Parsley

½ tsp
Turmeric powder

1 piece
Bay Leaf

1 piece
Cinnamon Stick

Preparation
- Heat the oil in a pot, then add onion and cook for 1 min.

Now add the bay leaf and the cinnamon stick and cook for another minute.

Add the chopped carrots, potato and tomato and cook for another 2-3 min. Stir in between.

Now add 1/2 cup of water, mix well, cover with a lid and cook for about 5 min.

Add the cauliflower and cook for another 5 min.

Now add the cooked chickpeas, curry powder, black pepper and coriander powder and the remaining water.

Stir well and let the mixture simmer for another 5 min.

To round things of, you can add fresh cilantro and/or parsley.
