Clear Vegetable Soup

If your appetite (agni) is not so strong, or if you are just recovering from an illness, a cold or a flu, we very much recommend you to eat this soup. It is easily digestable, increases agni and also helps during weight loss.

Ingredients for 2 Servings

  • 4 cups

    Water

  • 1 tsp

    Olive Oil

  • 1 tsp

    Organic Vegetable Stock Powder

  • ½ tsp

    Salt

  • 2 pinches

    Black Pepper

  • 2 pinches

    Turmeric

  • ¼ cup

    Green Beans (chopped)

  • ¼ cup

    Bok Choy or Spinach

  • ¼ cup

    Cauliflower

  • ¼ cup

    Onions, chopped

  • 1 tsp

    Leak (finely chopped)

  • 1 tsp

    Cilantro + Parsley

  • ½ tsp

    Garlic

Preparation

  1. Heat the oil in a soup pot, add garlic and the chopped leak; cook until the leak turns slightly brownish.

  2. Now add all other vegetables; mix well and cover with a lid. Cook for 3 to 4 min. Do not add water.

  3. Add the chopped carrots, potato and tomato and cook for another 2-3 min. Stir in between

  4. Now add ½ cup of water, mix well, cover with a lid and cook for about 5 min.

  5. Now add the salt, the turmeric and black pepper powder and 2 cups of water. Bring to boil and let it simmer for 5 min.

  6. Once the vegetables are about half-cooked, add ½ tsp of vegetable stock powder and another cup of water. Stir well, bring to boil, then turn off the flame.

  7. To round things off, sprinkle finely chopped coriander leaves or parsley leaves on top for extra flavour.

Notes

We recommend you buy fresh, organic vegetables. For Vata constitution, add cumin powder; for Pitta constitution, add coriander powder; for Kapha constitution, add ginger powder.
