Coconut Lime Rice
Coconut Lime Rice is a fragrant and flavorful dish, most popular in Southeast Asia. It pairs well with curries, sambar, or sauteéd vegetables. It’s a delicious source of vitamin C and it provides a variety of health benefits such as promoting digestion and reducing inflammation.
Ingredients for 4 – 5 Servings

Coconut or Sunflower Oil

Cooked Rice

1 tbsp
Split Yellow Peas

Urad daal

Onion

1/2 cup
Freshly Grated Coconut or Dry Coconut

Mustard Seeds

2 stalks
of Curry Leaves

Green Chili (unseeded)

Lime Juice

1 1/2 tsp
Salt

1/2 tsp
Turmeric Powder

Preparation

Chop the onion and chili into small pieces and set aside

Heat oil in a pan and add the split yellow peas and urad daal and cook until slightly brown

Add the mustard seeds, curry leaves and chili. Mix well

Add the onions and cook for about a minute

Add the coconut, turmeric and salt and mix well
-
Place the cooked rice into a separate pot and mix the lime juice into the rice
-
Mix the lime rice into the pan with the spices and cook for 3-4 minutes. Stir regularly – the rice should be evenly yellow

Turn the flame off and garnish with coriander leaves
