Preparation

Heat a pan and start roasting the black peppercorns, coriander seeds, cumin seeds, fennel, cardamom, star anise, cloves and the cinnamon stick

Once you begin to smell the aroma of the spices from the roasting, add the curry leaves

Roast for another 30 seconds or more until the curry leaves are crunchy (keep stirring to prevent it from burning)

Let the mixture cool down for 5 minutes

Then blend the mixture into a powder and store in an air-tight jar
