Pitta/Vata Balancing, Kapha in Moderation
Ghee
Ghee, although made from butter, is actually gluten- and lactose-free. It is rich in Vitamins A, D, E & K, and high in Omega-3-6-9 fatty acids, beta-carotene & antioxidants. It has a rather high smoke point, making it ideal for cooking and frying. Its unique nutty flavour add a welcome character to most dishes.

Preparation
-
Place the butter into a heavy-bottomed saucepan and melt the butter on a medium flame.
-
Once the heat creates a lot of froth on the butter, reduce the flame to a minimum.
-
Let the butter simmer for another 10 min. Notice, the froth has now turined into small bubbles with visible ghee.
-
Set aside and let the ghee cool down for at least 5 min.
-
Now filter the golden-coloured ghee through a sieve or muslim cloth and store in a dry jar.
Notes
Ghee does not have to be stored in the frigde.
