Quinoa Salad
This is a highly nourishing salad with lots of nutrients, soluble fibers and protein. It is great as a summer dish on its own.Best choice of salad for all Vata constitutions.

Cooked Chickpea or Green Peas

Steamed Green Beans or Asparagus

¼ cup
Cucumber, diced

Cherry Tomatoes

Rucola

Lemon Juice

Tamari

1 tbsp
Cilantro Leaves

Parsley

Preparation

Prepare the chickpeas, quinoa and green beans in advance. Use a pressure cooker for the chickpeas.

Put the tamari, lemon juice, black pepper and olive oil into a bowl and mix well.

Place all ingredients (except for fresh herbs) into another bowl and mix them well.

Drizzle the tamari-olive oil-lemon juice mix over the salad.

Sprinkle the coarsely chopped cilantro and parsley over the salad.
