Sautéed Beetroot
Sautéed beetroot is a side dish rich in nutrients like fiber, folate, and potassium. It pairs well with daal and rice, or it can be eaten with chapati. Beetroot may help lower blood pressure, improve digestion, and support brain health.
Ingredients for 4 – 5 Servings

Chopped Onion

Mustard Seeds

Curry Leaves

Mild Green Chili (unseeded)

Sea Salt

1/4 cup
Freshly Grated Coconut or 2 tbsp Dry Coconut

Sunflower or Coconut Oil

Preparation

Cut the green chili into small pieces
-
Heat up a pan and add the oil
-
Add mustard seeds, when they begin to pop add the curry leaves and the chopped chili and stir for 30 seconds

Add the onion. Stir the mixture for 2 minutes

Now add the beetroot together with the turmeric powder and sea salt
-
Cook until the beetroot is soft but still crunchy

Add the grated or dry coconut and mix well before removing from heat
