Ingredients for 4 – 5 Servings

  • 2 tbsp

    Chopped Onion

  • ½ tsp

    Mustard Seeds

  • 1 stalk

    Curry Leaves

  • 1/4 tsp

    Turmeric Powder

  • 1

    Mild Green Chili (unseeded)

  • 1 ½ tsp

    Sea Salt

  • 1/4 cup

    Freshly Grated Coconut or 2 tbsp Dry Coconut

  • 2 tbsp

    Sunflower or Coconut Oil

Preparation

  1. Cut the green chili into small pieces

  2. Heat up a pan and add the oil

  3. Add mustard seeds, when they begin to pop add the curry leaves and the chopped chili and stir for 30 seconds

  4. Add the onion. Stir the mixture for 2 minutes

  5. Now add the beetroot together with the turmeric powder and sea salt

  6. Cook until the beetroot is soft but still crunchy

  7. Add the grated or dry coconut and mix well before removing from heat
