Ingredients for 4 – 6 Servings

  • 500 g

    Long Beans

  • 1/2

    Onion

  • 1 tsp

    Mustard Seeds

  • 1 tsp

    Turmeric Powder

  • 1

    Green Chili (unseeded)

  • 1 1/2 tsp

    Sea Salt

  • 10 tbsp

    Freshly Grated Coconut or Dry Coconut

  • 2 tbsp

    Sunflower or Coconut Oil

  • 1 stalk

    Curry Leaves

Preparation

  1. Chop the onion, chili and long beans into small pieces

  2. Heat oil in a pan and add the mustard seeds and curry leaves. Stir until the mustard seeds begin to pop

  3. Add the chopped onions and chili and cook for 2 minutes

  4. Add the long beans together with the turmeric powder and sea salt. Mix well

  5. Cover with a lid and cook for 10 minutes. Stir regularly to prevent burning

  6. Mix the grated coconut into the beans and cook for another 2 minutes
