Sautéed Long Beans
Sautéed long beans are a delicious side dish that pairs very well with rice. Low in calories, high in fiber, and rich in vitamins and minerals such as vitamin C, vitamin K, and folate, green beans are a very healthy food option.
Ingredients for 4 – 6 Servings

Onion

Mustard Seeds

Turmeric Powder

Green Chili (unseeded)

Sea Salt

Freshly Grated Coconut or Dry Coconut

2 tbsp
Sunflower or Coconut Oil

1 stalk
Curry Leaves

Preparation

Chop the onion, chili and long beans into small pieces

Heat oil in a pan and add the mustard seeds and curry leaves. Stir until the mustard seeds begin to pop

Add the chopped onions and chili and cook for 2 minutes

Add the long beans together with the turmeric powder and sea salt. Mix well
-
Cover with a lid and cook for 10 minutes. Stir regularly to prevent burning

Mix the grated coconut into the beans and cook for another 2 minutes
