Scrambled Tofu
Scrambled Tofu is an excellent alternative to scrambled eggs. High in protein, it contains all the amino acids the body needs as well as a wide variety of minerals and vitamins.
Ingredients for 2 Servings

Organic Tofu

1 tsp
Oil

1.5 tbsp
Salt

Black pepper powder

Spinach

¼ cup
Carrot (shredded)

Leak (chopped)

Heat the oil in a wok or skillet. When the oil is hot add chopped leak, cook until they are translucent, add the shredded carrot and cook for a minute. Now add chopped spinach and cook for 5 minutes.

Add turmeric and black pepper powder.

Scramble the tofu into the spinach mix and cook well for another 5 min on high flame with quick stirring, add salt and mix well.

Remove from the flame add the chopped parsley and roasted pumpkin and sunflower seeds. Enjoy with a cup of tea for breakfast.
Tip:
For people with kapha constitution, reduce the amount of tofu and add vegetables instead. Also, add 1 tsp of freshly grated ginger.
