Preparation

  1. Wash the white rice, toor daal, split yellow pea, mung beans and urad daal

  2. Soak overnight in 6 cups of fresh water

  3. On the following morning, blend the mixture with some of the water used for soaking until you get a pancake-like batter. Add more water if necessary during blending

  4. Chop all the herbs (curry leaves, cilantro, parsley) and add to the batter together with the turmeric powder. Mix well

  5. Heat a crepe pan until it is very hot. Pour 1/2 cup of the batter into the middle of the pan. Use the back of a spoon and quickly spread the batter in circular motions until you get a thin crepe

  6. Cover with a lid and cook for 1 – 2 minutes

  7. Remove the lid and drizzle 1/2 tsp of ghee or coconut oil over the dosa

  8. Flip the dosa and let it cook for another 30 seconds. Enjoy it with your favorite chutney
